You Can Find Me in the Kitchen

Since i was a young child I've always loved to cook and bake.  I'm really good at following directions and love to put my own twist on things.  Last night i missed a phone call (yes i was in bed by 9) from my good girlfriends mama who i had shared a recipe with.  She couldn't figure out why her crinkle cookies didn't turn out. I told her not to worry i was on in.. So today i baked her 4 dozen crinkle cookies.  I decided to make a little extra dough and try something new.  If you're familiar with a crinkle cookie they're like little brownie bites or bites of heaven as i call them.  I decided to put them over the edge i'd bake them with a rolo in the center.  So that's just what i did.  And Oh My Holy Goodness.  These cookies are incredible.  So, I've decided to share the recipe.  The only change i made was when i used my 1 1/2 tbsp full of dough i placed a rolo in the center and rolled it up.  i'm a girl who actually loves being in the kitchen and happy to be in there.


Ingredients

  • 1/2 cup confectioners' sugar
  • 1 2/3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons (1 stick) unsalted butter, at room temperature
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract

Directions

Before you start

Preheat an oven to 350°F. Grease 2 baking sheets with butter. 

Put the confectioners' sugar into a bowl and set aside.

Mix the ingredients
In another bowl, using a wooden spoon, stir together the flour, cocoa, baking powder and salt. Set aside.

In a large bowl, using an electric mixer, beat the butter and sugar on medium speed until creamy, about 3 minutes. Turn off the mixer and scrape down the bowl with a rubber spatula. Add 1 egg and beat on medium speed until blended. Add the other egg and vanilla and beat until blended.

Turn off the mixer and add the flour mixture. Beat on low speed just until blended.

Form the cookies 
Using a tablespoon, scoop up a rounded spoonful of dough. Scrape the dough off the spoon into the palm of your other hand. Roll the dough into a ball. Roll the ball in the confectioners' sugar until covered. Place the balls on a prepared baking sheet. Repeat, spacing the balls about 2 inches apart.

Bake the cookies
When 1 baking sheet is full, put it in the oven and bake the cookies until they are crackled and puffed, 10 to 12 minutes. Using oven mitts, remove the baking sheet from the oven and set it on a wire rack for 15 minutes. 

Using a metal spatula, move the cookies onto the rack and let cool completely. Repeat with the rest of the cookies. Makes about 24 cookies.

Don't Settle

Truth Bomb mom Kristina Kuzmic Offers a powerful message to single moms(Parents).  I usually won't share things like this on my facebook page but thought it was worth writing about on my blog.
She recounts the first time she started having really strong feelings for someone after her divorce,  She was determined to make sure that this man knew it all.  All her imperfections, drama and trash, she was sure he'd run without a doubt.  But to her dismay he stuck around only saying he wanted a part of it all.  She decided to introduce her children to him when she was secure in her feelings with him.  She then shares a story that many single PARENTS know very well.  A sick child waking in the middle of the night followed by the waking of the other child all while being sick yourself.  Trying to clean up the vomit and settle everyone.   She decides to pick up the phone and call this man and say... 
Why would any sane man sign up for this, you say you want this and you say you want everything that comes with it. Then come over.  The Kids are screaming when he arrives, She expected him to walk in and have a look of horror on his face.  This man walked over to Kristina sending her to bed and cared for her children, cleaning up the vomit.  After tucking everyone into bed this man returned to Kristina saying Yes, i want this, All of it, All three of you.
She made this video because she wants all the single parents to know that you don't have to settle.  We all want something wonderful in our lives but we so often don't actually believe that we deserve something wonderful.  We have broken relationships behind us and feel like we have failed. We're exhausted and we're insecure and completely stressed out and stretched to our breaking point.  The thought that someone could love us makes us lose all common sense.  Even though i'm divorced, even thought i'm imperfect, and even though i have children.  DON'T let your insecurities run the show.  
Being a single parent can be hard, lonely and be too heavy of a load for just one person but don't settle.  Someone will love this piece of crap that we think we are.  It will only be the best thing ever if you don't settle.  Someone will love you and love your children as their own.

One Down One to Go

One down, one to go... the holidays that is.  
The weekend before thanksgiving my phone was stolen.  I placed it on the counter at a store and walked out only to return minutes later and it was gone.  So, my mood/emotions were on the rise the days leading up to Thanksgiving.  
As strange as it may sound a small part of me wanted the day to come for me to drop the boys off at their dads so i could feel the pain and get it over and done with quickly.  They were excited to "set up" and "prepare" for their feast at their dads house, i faked smiles and told them how excited i was for them all along breaking inside that i can't offer them the same.  I used to be the one planning and prepping for the feast and just like that it was gone.  I know that one day i too will be able to offer them it all.  But, for now since my family is out of town and i won't take the boys from their dad i'll just have to get comfortable with it.  I had a nice thanksgiving celebrating with friends and feel so blessed to have so many that truly love and care about me.
I also spent the weekend finishing up the decorations inside and outside the house.  Micah may have told me that my lights outside kind of suck but at least they look better than nothing at all.  Hey, i'll take it.  
But my favorite moment was when i was driving down book between 75th and 83rd and i saw my favorite decoration had been put out.  This is going to sound silly but for years someone takes the time to string a single strand of battery operated lights on a tree in the forest preserve.  There it stands in the middle of the darkness.  My heart feels complete joy every time i pass it.  I even find myself driving that route just to get a glimpse of it.  If you're ever in the area and its dark outside take that route.  I have no idea who does it or why but they do it every year (moving it a little each year)  They must know it brings a smile on many peoples faces.
Next up... Christmas (and my sweet baby boys birthday)  Christmas isn't much easier than thanksgiving but i'm lucky enough to get my boys on Christmas eve and Christmas morning.  The boys and i have so many traditions and memories packed into those 24 hours that it's magical.  This Friday i have an ugly sweater party and i'm super excited about what I've put together to wear.  Let's just say i don't always follow the rules...
My Christmas cards are addressed and ready to be mailed December 1... So, keep your eyes open for yours to arrive.  
After the 1st of the year there will be some changed coming to out weekly routine and i'm super excited but also a little nervous about it all.  Change is always good.

My Phone...gone just like that...

You don't realize how lost you feel until you completely lose your phone, or lets me rephrase that... your phone is stolen.  My sister and her husband were coming into town on Saturday for a short visit.  I decided to get up early and run some errands.  I stopped at Target and then i has to make a quick return to walmart (ugh, that will teach me to go into a walmart) When i went to the service counter i placed my phone on the counter.  I turned around walked out.  It was raining so i was in a rush to get to the car.  I ran and within minutes i started to look for my phone.  I went back into the store realizing i placed it on the counter and by the time i returned it was gone.  A man at the store started to call it and i began to rethink my steps.  He said he'd continue to call it just in case i left it in the car.  It was nowhere to be found.  I drove over to one of my good friends house and she calmly walked me through what happened and gave me a phone she had at her house so i had something until i could figure everything  out.
I drove over to check on the boys (i don't know anyone's phone number) i then went over to the mobile store and spoke with them.  They said it was very likely that all my contacts and photos were gone unless the phone was found.
I felt sick, completely violated someone had some of my most personal memories at their fingertips.  We continued to call the phone and finally decided to disable the sim card.  My sister and brother in law arrived and helped me to track the phone.  We located it at a church in the ghetto of Chicago.  At that moment i realized that i'd never see that phone or any of those memories again.  I started to save some of the photos earlier in the summer (i'm scared to look and realize how many are actually gone) I'm so thankful for my sister and my brother in law helping me figure out how to set up my temporary phone. 
It wasn't even a fancy phone, and was actually super glitchy and didn't hold much of a charge.  Ugh, those memories...gone, all gone...
One of my friends said to me today... I guess its time to make new memories.  I couldn't agree more (but i'm still in a funk over it all)  This weekend didn't go at all how i expected but then again life never really does...  So, needless to say i recovered some of my contacts through google but if you've been added in the last year you're gone... erased from my life (that may actually be a good thing for some)

Success

How do you define Success?

Today i had the pleasure of attending a presentation as a part of the Glenbard Parent Series... Before the main speaker got up a gentleman by the name of Patrick Donohue posed the question, how do i define success.  At first i'll be honest i thought um, okay.  But he went on to define it and what he said struck me, not just as a parent, but as a women.

Success:
Fully going for it, even when you don't know the outcome.

Let, me just stop there.  Do you have any idea the number of things i have stopped moving forward toward because i was scared of what the outcome might be.  The rejection, the failure, but wait what if things turned out great and i was a success.

Here are a few questions he says to ask:

~Was i Physically ready?
~Was i mentally ready?
~Was i emotionally ready?
~Did i give full effort throughout?

Here are three questions to ask when things go wrong:

~What happened?
~What can i learn from it?
~What is the way forward?

Bottom line is i need to apply this with my children and myself.  The more i stretch myself the smarter and more efficient myself and my children will become.

I Have This HOPE

I Have This HOPE in the depth of my soul

This summer the boys and i had the joy of being part of a wave that moved through our community called kindness rocks.  We would paint rocks and hide them around our community hoping that people would find them and it would bring a little joy and happiness into their lives.  The idea is when you find the rock you enjoy it but then re hide it spreading more joy to others and so on.  
Just a few weeks ago on a Saturday morning the boys and i had just finished our pinewood derby workshop when Josiah decided to climb a tree in the parking lot.  (Jo can't pass a tree without giving it a go) What he discovered in the tree was a rock and on it, it said 'I have this HOPE in the depth of my soul.' A rainbow was painted on it.  He was super excited to find this kindness rock and passed it off to me asking me to hold onto it for him.  We loaded into the car and i placed it in my cup holder.  Over the days as i would get into my car i would see this rock and remind myself...Hope, have hope.  A few weeks later i still have this rock and can't seem to let it go.  As i did a little research on the phrase I Have This HOPE... I found a few things.  First i found a song by tenth Avenue... I decided to listen and clearly someone was trying to send a clear message when placing this rock in that tree in that parking lot.  Maybe it was a message i needed at that very time.  I do have this HOPE, whatever is meant to happen will happen in the depth of my soul.

It just has me thinking that maybe it's time, i should pass that rock on.  Drop it for someone else to find, maybe giving them hope.  I know what my heart wants, i know what it needs but it's just not yet my time.  There is purpose for it all, no fear just TRUST.  Keep your eyes open you never know where i may drop it...

The Holidays and Single Parenting...

As a single parent the holidays are never easy.  With Thanksgiving just 2 short weeks away it starts again.  This will be the 3rd Thanksgiving i'll watch my children walk out that door and myself back into a empty quiet home.  With all my family out of town traveling isn't an option at this time of year because i don't want to take the boys from their father.  But, where does that leave me?  It has made me create a family here locally.  I already have a ton of invites to Thanksgiving but it's still hard.  Walking in is never easy.  If i'm honest i thought it would be different.  
Thanksgiving used to be one of my favorite holidays to host.  I'd start planning the menu weeks in advance giving attention to every detail.  I'd have place cards made and decorations by the boys up.  I took joy in it all.  Now, there is just a different feeling.  But, my hope and prayer is that i'll get some of that back eventually in the near future.  I still love doing all those things i just need a reason to do them.
Once Thanksgiving passes Christmas quickly follows.  The boys and i usually put up our decorations rights after Thanksgiving.  Time passes to quickly.  Before i know it, it is Christmas eve.  This is a time when i create so many amazing memories with my boys.  Again the attention to detail is important to me.  The cookie decorating, the matching pajamas and tracking Santa just to name a few.  Then Christmas morning... 3 incredibly excited boys can't stay in bed a minute passed 5am.  But then again the sadness strikes.  I watch my boys walk out the door to spend the day with their dad.  Some may call me the Grinch but thats when i decide to take every last trace of Christmas down.  Out of sight out of mind.  This year i'll likely keep with the tradition of attending misfits Christmas... I kind of crash that party too, showing up alone.
I have so many incredible friends and they always keep me in mind and send me invites but unless you've watched your children walk out that door its a pain you won't understand.  
I don't want it to sound like i hate the holidays.  Because i don't, i just wish they were different.  I'm fully confident or at least slightly confident that in the near future they'll feel different. My main goal is to just make sure the boys are happy and they feel good about the holidays.

She said Jump...

So, recently i let my guard down and i Jumped... She said just do it, if you fall i'll help you get back up.  Letting go and being completely vulnerable is really hard for me.  Over a year ago one of my good girlfriends said to me... You have to Jump, if you don't you'll miss out.  If you Jump and fall i'll catch you and help you back up.  Recently i walked into her house and said... well, i jumped and i think i'm falling.  I began to cry and she hugged me tighter and said not yet, not yet.  I like to always be in control of my feelings when i feel them moving... it scares me.

My Sisters...My Best Friends

A little background on me...I've been blessed with 2 incredible sisters.  One older and one younger.  That makes me the middle sister.  I love that role.  I have an incredible relationship with them both.  Different but incredible each in there own ways.
My Older sister was my first best friend.  She's had my back from day one.  I've heard stories of her taking care of me from a very young age.  I've gone to her with my every up and down.  She was my first phone call when i thought i was pregnant with my oldest.  And has encouraged me along the way.  She was my first phone call after the incident and i didn't know what to do. She has laughed with me harder than anyone else.  She's cried harder with me than anyone else too.  When i hurt she hurts for me and vice versa.  She knows that if i call in the middle of the day she needs to sneak away from work and take my call because it's something big.  Or in the middle of the night.  She's taught me so much about myself and how to be a better stronger more confident woman.  I always ask her advice, i don't always take it but i listen and consider carefully.  I was lucky enough to stand next to her as her maid of honor at her wedding, and rushed to be by her side when her baby was born at just 30 weeks.  I'd drop everything for my older sister just as she would for me. 
Almost 10 years ago... Tomorrow actually was a day i needed her.  I was 34 weeks pregnant with my oldest son.  I went in for a routine visit when i was telling my doc about somethings that had been going on.  He decided to be safe he would sent me over to the hospital for observation.  Everything was great until around 4 when my doc came in to release me.  Suddenly my babies heart rate was gone.  They were able to find it but decided to keep me over night.  Of course my sister was my first phone call.  I was terrified i didn't know what any of this meant.  The next morning the doc decided that the only solution to the distress my baby was in was to deliver him.  Again a phone call was made to my sister.  She got on the next flight and when i woke after my c-section she was there with me. 
This summer the boys and i spent a week in Michigan around the 4th of July.  One of my favorite and silly memories was made that weekend.  As the boys played with sparklers, glow sticks and made smores we too had fun.  We sang to endless songs, danced around and woke the next morning covered in mosquito bites.  This weekend my sister and her family are coming to visit.  It's not only Micah's 10th birthday but a weekend that many memories will be made.  I do often wonder how my brother in law puts up with us... we are a package deal after all. 

I like to think of myself as my Younger Sisters first best friend.  She was born 10 years after me.  I wanted a baby sister for years.  I selfishly just wanted to play doll with her.  I remember the day she was born like it was yesterday.  I took care of her all hours of the day and night.  I treated her like she was my own.  I protected her.  I served more a mother role to her over the years.  When my life changed a little over 4 years ago i didn't pick up the phone and call her.  I was scared.  I didn't want to let her down, i didn't want to let her know that her bigger stronger sister was made to feel so small and so weak.  Then one day i broke, that was the day our relationship changed forever.  I told her what happened to me.  The mother daughter relationship changed that day.  She then was my sister and best friend.  I speak to her on the phone almost everyday.  She and i have laughed together and cried together.  When she comes to visit we always sleep in my room taking until someone eventually falls asleep.
This summer i was lucky enough to stand next to her as her maid of honor as she married her new best friend and husband.  So many great memories were made the weekend of her wedding in Grand Rapids.  Some i'd like to forget and some i'd like to relive. I can't wait to walk the rest of her journey with her.  She is so incredible. 

I don't know what the rest of our journey as sisters will look like but what i DO know is that we'll laugh a lot and cry some too but together we have it all.

Kesha - Praying

This Saturday the 29th is the 4 year anniversary of the night that my life changed forever... FOREVER!  I hope you find your peace falling on your knees praying.  I still cry when i think about that night, as i play back the events, the aftermath.  In some ways i wish i could make it all a bad dream and others i know it was the journey i was meant to take.

My story...

If you know me well you know that I've joked for a couple years now that i'd like to write a book about my journey.  I'd start with my childhood and move to to present.  I've even had a few say... Please don't use my real name.  Don't worry your secrets are safe with me but, we'll just create an alias because some of these stories are just to good to pass up on.  Every step of my journey I've had new trials set in my way.  With a few tears and perseverance I've over come them or am still working on it.  I've made a lot of great friends along the way and had many laughs, oh and a few pity parties.
If you had told me 10 or even just 5 years ago this would be my story i'd tell you, No, that just happens in Lifetime movies.  Oh my stories are true and what i call life.

Whitney Houston - I Wanna Dance With Somebody

One of my favorite moments from Katie and Nicks wedding was when my sisters and i all heard Whitney Houston's I wanna Dance With Somebody come on.  Michelle and i went running up the stairs headed for the dance floor where we were greeted by the bride.  The three of us had no other focus but to dance with one another.  As the song came to an end i looked over and realized we were being watched and even video taped.  I'm in the process of trying to hunt that video down.  I'm so blessed to have 2 incredible sister that always have my back, and always want to dance with me... until i find that somebody.

Be UNstoppable!

Most Girls are smart, strong and beautiful... be unstoppable, fight to make everyday.  I want to be like most girls but, at the same time i want to be just like ME.  We live in a world of so many stereotypes.  No two girls are the same and don't let anyone box you in.  Be UNstoppable!
I don't fit the typical mom stereotype and thats something i love about myself.  I'm comfortable in my own skin and hold my head high.  I want my boys to see me as a strong women/mom that can do it all.  Sometimes i want to crumble but i just keep pushing and moving forward.  Be UNstoppable!

Shakes you to the core

Sometimes, you find something that shakes you to the core.  Something that breaks you down in a way you didn't realize possible anymore.  The admission of pain, selfishness and the torture they knew you endured at the hands of someone who said they'd love you
Relationships are strange like that.  There are so many different types of relationships, all with different purposes.  The definition of a relationship is: the way in which two or more concepts, objects, or people are connected, or the state of being connected.
So, lets step back for a second...
This past weekend i had the pleasure of attending my baby sisters wedding.  For the record it was a beautiful day and Katie looked incredibly gorgeous.  I'm So SO proud of the women that shes become.  During the reception a speech was given and during it they spoke of being inside the inner circle of someones love.  The safety and security.  They said that now Katie is inside that circle.  It just makes me realize that if you don't have that inner circle it can be scary.
There is something about knowing that no matter what you tell someone, how you feel or act you'll always be loved. Knowing you're loved no matter what and someone always has your back. It takes a lot to break that circle.  I'm so happy for my baby sister that she's found that with Nick her new husband.
I can remember as a child just wanting to feel safe and loved.  I never wanted to shake the boat or cause waves.  I just wanted to be inside the circle. Now as an adult i have lots of circles.  They're all safe circles but none of them fully fulfill me the way i want and need.  Sometimes i wonder what that will look like and if i'll ever truly find it.  Am i already inside that circle or on the edge of entering that circle? Only time will tell but some days its harder to sit back and be patient.
Earlier today i was working on some PTA stuff and as many of you know i like to stay organized so i was creating a file.  While going through the old files and clearing out what i didn't need i found a hand written letter that brought me to tears instantly.  The words hit deep and stopped me in my tracks.  Things like this make me realize that i am an incredible person to have in someones inner circle.  My time will come!
And a side note, today i ran into one of my favorite people at swim team practice.  Its one of my friends dad... he always has a story for me and tons of advice.  Oh and he always greets me with hows the most beautiful lady i know doing on this great day?  so that helps.

Adventure Ahead...

This weekend i'm headed on an adventure, one i never thought id'd be experiencing.  As the days get closer i'm getting more excited.  The weekend will be filled with good company and lots of outfit changes.  I hope to come back with a few stories and memories that will last a lifetime.  I'm hoping to document as much as possible and can't wait to share it all with you.  Cheers to a good adventure

Day's Like This

Sometimes its not clear why God places certain people in our lives.  Or why we cross paths when we do.  Chance meetings that lead to a story, one we never expected to discover.  This happened to me just recently.  I was enjoying dinner when listening to my friend speak of their friend as i listened to the story i began to realize that i too know this person.  This person played a very significant role in my life during a very difficult time.  We kind of carried each other through the pain and in time created a friendship that one would think would last forever.  We knew more about each other than most, we shared our emotions and weren't afraid to be ourselves.  Then one day it just ended.  The friendship was gone.  As that friendship disappeared at the same time i was experiencing pain from my past relationship that shook me to the core.  My friend was gone, i didn't know why and  was faced with a reality that i had only nightmares about.
I always knew there had to be more to the end of that friendship.  I had my own ideas but truly believed this person was like none other.  They too had been hurt in their past they certainly wouldn't hurt me like that.  But after listening to my friend at dinner i realize that even the ones you think are good can hurt you to.  Saying one thing and doing another.  I wonder... why God why did you place this information in my hands?  Was it for closure?  Was it to grow closer to you?  Was it to bring me closer to others.  I just pray that i feel peace.
I am what i am, you get what you see.  I am honest and live by my word.  I just ask that you do the same.
