You Can Find Me in the Kitchen

Since i was a young child I've always loved to cook and bake.  I'm really good at following directions and love to put my own twist on things.  Last night i missed a phone call (yes i was in bed by 9) from my good girlfriends mama who i had shared a recipe with.  She couldn't figure out why her crinkle cookies didn't turn out. I told her not to worry i was on in.. So today i baked her 4 dozen crinkle cookies.  I decided to make a little extra dough and try something new.  If you're familiar with a crinkle cookie they're like little brownie bites or bites of heaven as i call them.  I decided to put them over the edge i'd bake them with a rolo in the center.  So that's just what i did.  And Oh My Holy Goodness.  These cookies are incredible.  So, I've decided to share the recipe.  The only change i made was when i used my 1 1/2 tbsp full of dough i placed a rolo in the center and rolled it up.  i'm a girl who actually loves being in the kitchen and happy to be in there.


Ingredients

  • 1/2 cup confectioners' sugar
  • 1 2/3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons (1 stick) unsalted butter, at room temperature
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract

Directions

Before you start

Preheat an oven to 350°F. Grease 2 baking sheets with butter. 

Put the confectioners' sugar into a bowl and set aside.

Mix the ingredients
In another bowl, using a wooden spoon, stir together the flour, cocoa, baking powder and salt. Set aside.

In a large bowl, using an electric mixer, beat the butter and sugar on medium speed until creamy, about 3 minutes. Turn off the mixer and scrape down the bowl with a rubber spatula. Add 1 egg and beat on medium speed until blended. Add the other egg and vanilla and beat until blended.

Turn off the mixer and add the flour mixture. Beat on low speed just until blended.

Form the cookies 
Using a tablespoon, scoop up a rounded spoonful of dough. Scrape the dough off the spoon into the palm of your other hand. Roll the dough into a ball. Roll the ball in the confectioners' sugar until covered. Place the balls on a prepared baking sheet. Repeat, spacing the balls about 2 inches apart.

Bake the cookies
When 1 baking sheet is full, put it in the oven and bake the cookies until they are crackled and puffed, 10 to 12 minutes. Using oven mitts, remove the baking sheet from the oven and set it on a wire rack for 15 minutes. 

Using a metal spatula, move the cookies onto the rack and let cool completely. Repeat with the rest of the cookies. Makes about 24 cookies.

Don't Settle

Truth Bomb mom Kristina Kuzmic Offers a powerful message to single moms(Parents).  I usually won't share things like this on my facebook page but thought it was worth writing about on my blog.
She recounts the first time she started having really strong feelings for someone after her divorce,  She was determined to make sure that this man knew it all.  All her imperfections, drama and trash, she was sure he'd run without a doubt.  But to her dismay he stuck around only saying he wanted a part of it all.  She decided to introduce her children to him when she was secure in her feelings with him.  She then shares a story that many single PARENTS know very well.  A sick child waking in the middle of the night followed by the waking of the other child all while being sick yourself.  Trying to clean up the vomit and settle everyone.   She decides to pick up the phone and call this man and say... 
Why would any sane man sign up for this, you say you want this and you say you want everything that comes with it. Then come over.  The Kids are screaming when he arrives, She expected him to walk in and have a look of horror on his face.  This man walked over to Kristina sending her to bed and cared for her children, cleaning up the vomit.  After tucking everyone into bed this man returned to Kristina saying Yes, i want this, All of it, All three of you.
She made this video because she wants all the single parents to know that you don't have to settle.  We all want something wonderful in our lives but we so often don't actually believe that we deserve something wonderful.  We have broken relationships behind us and feel like we have failed. We're exhausted and we're insecure and completely stressed out and stretched to our breaking point.  The thought that someone could love us makes us lose all common sense.  Even though i'm divorced, even thought i'm imperfect, and even though i have children.  DON'T let your insecurities run the show.  
Being a single parent can be hard, lonely and be too heavy of a load for just one person but don't settle.  Someone will love this piece of crap that we think we are.  It will only be the best thing ever if you don't settle.  Someone will love you and love your children as their own. 
I'll be honest i sobbed the whole time i watched the video.  It is out there and it's waiting for you!
